Welcome to Alba St. Henri, a bakery dedicated to reviving the craft of traditional baking and serving Montreal’s Saint Henri community and beyond

Our mission is simple: to create real bread using pure ingredients, natural fermentation, and time-honoured techniques. We believe that true flavour comes from patience, quality ingredients, and respect for tradition.

At Alba, we bake bread the way it was meant to be—free from additives, shortcuts, and gimmicks. Our loaves are hand-shaped, naturally fermented, and baked to perfection. We focus on the essentials: flour, water, salt, and time. This commitment to simplicity allows us to deliver authentic products that taste as good as they should, just like they used to

Currently operating from my home, the selection of products will grow over time. I am currently looking for a commercial space in St. Henri which will allow me to serve the community with a large range of delicious bakes and foods on a daily basis
